What is actually in the bag
1. Organic Potatoes
Certified organic, grown in Idaho, and free of CIPC, the sprout inhibitor sprayed on most stored potatoes. Sliced thick enough to hold their shape in the fryer, which is why they break like a chip should instead of shattering.
2. 100% Grass-Fed Tallow
In 1853, chef George Crum sliced potatoes thin, fried them in beef tallow and served them to Cornelius Vanderbilt in Saratoga Springs. That is where the potato chip comes from, and where the name Vandy comes from. Tallow is what chips were cooked in for the next century, until Big Food swapped it for something cheaper.
Ours is US raised, 100% grass-fed, with nothing added. It is the single largest cost in the bag.
The potatoes are certified organic. The tallow is not, deliberately. Grass-fed matters more in a frying fat than the certification does.
3. Sea Salt
Sea salt, and that is where the list ends. Gluten free, dairy free and nut free. Made in-house outside New York, in the same facility as MASA.
No oil of any kind. Only tallow.

FAQs
Does it taste like beef?
No. Tallow is a clean, neutral frying fat at temperature. What you notice is a firmer crunch and a cleaner finish, not a greasy film on the roof of your mouth.
Is the whole product certified organic?
The potatoes are certified organic and CIPC-free. The tallow is not certified, and that is deliberate. We buy on 100% grass-fed and US raised instead, which is the thing that actually matters in a frying fat.
Can I choose my flavors?
Not on this page. New customers do best starting on Original, so that is the entry box. The variety bundles come pre-mixed with all four flavors, so you get the full range without having to guess which one you will like.
