1 sheet puff pastry, thawed

2 tbsp salted butter

¾ cup diced yellow onion

1 cup chopped spinach

1 cup chopped red peppers

1 tsp Italian seasoning

1 tsp garlic powder

½ tsp salt

¼ tsp pepper

¾ cup shredded Gruyère cheese

¼ cup crushed Vandy Herbes de Provence

1 egg, for egg wash
Directions
In a skillet, melt butter over medium heat. Add onions and sauté for 10–12 minutes, until soft, golden, and fragrant.
Stir in spinach, peppers, Italian seasoning, garlic powder, salt, pepper, and Gruyère. Mix until evenly combined.
Roll out the puff pastry sheet and spread the mixture evenly on top.
Roll into a tight log, then freeze for 10–15 minutes to firm up.
Slice into 8 even pinwheels and place on a parchment-lined baking sheet.
Brush each with egg wash, sprinkle with crushed Vandy Crisps, and bake at 400°F for 18–20 minutes, until puffed and golden brown.
