A blend of artichokes, fresh spinach, and a rich base of mayo and coconut milk gets seasoned with garlic, onion, and paprika, then baked until bubbly and golden. Served with Vandy Crisps for dipping, it’s a savory, craveable classic made just a little more irresistible.
Ingredients

1 (14.5 oz) can artichoke hearts, roughly chopped

1 ½ cups raw spinach, roughly chopped

¾ cup mayonnaise

2 tbsp full-fat coconut milk

2 tbsp nutritional yeast

½ tbsp onion powder

½ tbsp garlic powder

½ tbsp salt

¼ tsp paprika

Directions
Preheat oven to 350℉ and lightly oil a ramekin or small casserole dish.
In a large bowl, combine all ingredients and mix well.
Transfer mixture to the prepared dish and smooth the top.
Bake for 25–30 minutes, until the edges are bubbling and the dip is heated through.
Serve warm with Vandy Crisps.
Recipe Note
Swap in kale for spinach if that’s what you have on hand, just make sure to chop it finely so it softens well.
