Ingredients

1 bag Vandy Crisps

1 serving caramel (see recipe below)

¾ cup chocolate chips

1 teaspoon coconut oil

⅓ cup pecans, roughly chopped
For the caramel

2 tablespoons water

¼ cup coconut sugar

½ cup full-fat canned coconut milk

1 teaspoon vanilla extract

Pinch of sea salt
Directions
Prepare the caramel
In a small saucepan, combine the water and coconut sugar. Bring to a boil over medium-high heat, stirring continuously to dissolve the sugar.
Reduce the heat to medium and add the coconut milk, vanilla extract, and sea salt.
Stir gently and continuously for approximately 20 minutes, or until the mixture thickens to a caramel consistency. Scrape the sides of the pan as needed to prevent burning.
Transfer the caramel to a glass jar and allow it to cool. Refrigerate until ready to use.
Assemble the turtle potato chips
Melt the chocolate chips with the coconut oil using a double boiler, or in a microwave in short intervals, stirring between each.
Arrange the Vandy Crisps evenly on a serving platter.
Drizzle the caramel over the chips, followed by the melted chocolate.
Sprinkle with the chopped pecans for added texture and flavor.
Place the platter in the refrigerator for the caramel and chocolate to set.
Serve chilled or at room temperature, and enjoy.
