1 lb chicken tenders

1/4 cup cassava flour

1 teaspoon paprika

1/4 cup ghee
Directions
Prepare the chip coating. Add Vandy Crisps to a food processor or blender and pulse until crushed, leaving some small pieces for texture.
Make the breading mixture. In a medium bowl, combine the crushed chips, cassava flour, paprika, sea salt, and black pepper.
Whisk the egg. In a shallow dish, beat the egg until smooth.
Heat your pan. Warm a skillet over medium heat.
Coat the chicken. Dip each chicken tender first in the egg, then into the chip mixture, pressing lightly so the coating sticks. Repeat for all tenders.
Pan-fry the tenders. Add ghee to the heated pan. Place coated chicken tenders in the skillet and cook for 2–3 minutes per side, or until golden and crispy.
Check doneness. Ensure the internal temperature reaches 165°F before serving.
Serve and enjoy. These tenders pair perfectly with ketchup, honey mustard, or a creamy aioli.
