Cranberry, Brie & Vandy Crostini

Ingredients

    • 1 baguette, thinly sliced

    • Extra-virgin olive oil (for brushing) or olive oil spray

    • 1 cup fresh cranberries

    • ¼ cup fresh orange juice

    • 1 tbsp orange zest

    • ⅓ cup sugar

    • Brie, sliced

    • Vandy Crisps Original

    • Sugared cranberries & orange zest (optional, for garnish)

    Directions

    1. Preheat the oven to 400°F. Arrange the baguette slices on a baking sheet and brush lightly with olive oil (or spray with olive oil spray). Bake for 8–10 minutes, or until golden and crisp.

    2. In a small pot, combine cranberries, orange juice, zest, and sugar. Simmer for 8–10 minutes, until the berries burst and the mixture thickens slightly. Let cool.

    3. Place a slice of brie on each crostini. Bake for an additional 1–2 minutes, just until the brie begins to soften and melt.

    4. Spoon a bit of the cranberry compote over each crostini, then top with a Vandy Crisp.

    5. Add a sugared cranberry and a pinch of orange zest for a festive, polished touch.
