Ingredients
For the crostini
-
1 baguette, thinly sliced
-
Extra-virgin olive oil (for brushing) or olive oil spray
For the cranberry compote
-
1 cup fresh cranberries
-
¼ cup fresh orange juice
-
1 tbsp orange zest
-
⅓ cup sugar
Toppings
-
Brie, sliced
-
Vandy Crisps Original
-
Sugared cranberries & orange zest (optional, for garnish)
Directions
Preheat the oven to 400°F. Arrange the baguette slices on a baking sheet and brush lightly with olive oil (or spray with olive oil spray). Bake for 8–10 minutes, or until golden and crisp.
In a small pot, combine cranberries, orange juice, zest, and sugar. Simmer for 8–10 minutes, until the berries burst and the mixture thickens slightly. Let cool.
Place a slice of brie on each crostini. Bake for an additional 1–2 minutes, just until the brie begins to soften and melt.
Spoon a bit of the cranberry compote over each crostini, then top with a Vandy Crisp.
Add a sugared cranberry and a pinch of orange zest for a festive, polished touch.
