If you’re looking for a Mother’s Day lunch that’s light, fresh, and a little bit fancy, these Puff Pastry Tea Sandwiches are the perfect choice. Instead of using standard sandwich bread, we’re using flaky, golden puff pastry "biscuits" to hold a creamy, zesty chicken salad. To make the platter even more special, we pair these sandwiches with Vandy Crisps Herbes de Provence. The aromatic herbs in the chips perfectly complement the lemon and Dijon in the chicken salad, making the whole spread feel like a spring garden party.
Ingredients

1 sheet puff pastry, thawed

1 egg (beaten for egg wash)

1 ½ cups cooked chicken, finely chopped

⅓ cup mayonnaise

1 tsp Dijon mustard

1 tbsp lemon juice

¼ cup celery, finely diced

2 tbsp yellow onion, finely diced

Salt & pepper, to taste

1 bag Vandy Crisps Herbes de Provence, for serving
Directions
Preheat your oven to 400°F. On a lightly floured surface, roll out your puff pastry sheet just a little bit. Use a knife or a circular cutter to cut the dough into small squares or circles (mini-sandwich size).
Place the pieces on a baking sheet, brush the tops with your egg wash, and bake for 12–15 minutes. You’re looking for them to be puffed up and deep golden brown. Let them cool completely before filling.
While the pastry cools, grab a medium bowl and stir together the chopped chicken, mayo, Dijon mustard, lemon juice, diced celery, and onion. Add a pinch of salt and pepper to taste.
Once the pastries are cool, carefully slice them in half horizontally. Spoon a generous amount of chicken salad onto the bottom half and place the top back on.
Arrange your mini sandwiches on a large platter. Fill the gaps with big bowls of Vandy Crisps Herbes de Provence. Garnish with a few fresh edible florals or sprigs of parsley for that extra Mother's Day touch.
